Celiac disease is a disorder of the small intestine caused by gluten which is a protein found in anything made with wheat. The gluten causes inflammation of the lining of the intestine. The villi become inflamed and flattened.
The disease can occur at any age. One in 130 people are diagnosed. It is more common in European ethnic background, and uncommon among Asians.

Classic symptoms are: cramping, bloating, diarrhea, foul smelling stool, floating stool, gas, abnormal retention, and weight loss. The villi cannot absorb nutrition which causes the vitamin deficiencies and weight loss Usually there is a vitamin D deficiency. Other symptoms include an iron deficiency, maybe abnormal liver, osteoporosis, short statue, infertility, all due to lack of nutrition. There can be breakouts on extremities and trunk of itchy small red blisters. More symptoms include mouth sores, delayed puberty, anemia, recurrent fetal loss. High risk individuals are those with type one diabetes.
Celiac disease is associated with down syndrome, rheumatism, migraines, depression, thyroid disease, infertility, severe heart failure, ulcers on the tongues and burning tongue. Long term risks include lymphoma and gastrointestinal cancer. Celiac disease can be diagnosed with a blood test which looks at antibodies. A celiac will have more antibodies if he or she has the disease. A biopsy of the small intestine will confirm the diagnosis. For an accurate result, a person should not be on a gluten free diet, but rather should have been eating gluten for six to twelve weeks before diagnosis.
Seventy percent of those who changed their diet, start showing improvement in two weeks. It is a slow process, however, for the inflamed bowel to heal. It takes three to twelve months for complete resolution.
To avoid vitamin deficiencies, these supplements can be taken: iron, folic acid, calcium, viatmin D, slenium, copper, and magnesium. These do not need to be taken separately, but can be in a mulitple vitamin form. Lack of fiber is also a concern. Rice causes constipation.

In perishable products such as soup, ingredients do not become airborne & equipment is washed well to prevent spoilage. Flour, however, can remain airborne for hours, later to settle on every surface and makes cross contamination likely in cereal products. Sometimes conveyor lines are floured to keep foods from sticking - candy _ frozen vegetables. Other foods, like ice cream, are made sequentially on the same line over the course of the day, and add trace amounts of gluten from ingredients in previous flavors. Its okay to eat: arrowroot, amaranth, buckwheat, cassava, corn, and flax products, legumes, lean port, fish, leafy green vegetables, mushrooms, poultry, dried fruit, seeds and nuts.
